Grilled Vegetable Freekeh Ingredients:

3 tablespoons of corn oil

2 lbs finely chopped onion

1 cup of freekeh

1 cups of water

1 teaspoon of salt

2 medium-sized zucchini, cut into medium-thick slices

2 large carrots, cut into diagonal slices

8 green onions, trimmed

2 tablespoons of virgin olive oil

Half a teaspoon of ground pepper




Heat the corn oil in a large frying pan over a medium heat, then add the onion and cook, stirring constantly, reducing the heat as desired, until golden, 10 to 45 minutes.

Place freekeh in a large bowl, cover with water by 2 inches, and soak in water for up to 40 minutes.

The freekeh is placed in a strainer until the caramelized onions are cooked, stirring occasionally, then 3 cups of water and a teaspoon of salt are placed, and cooked over low heat, waiting for the water to absorb from 20 to 25 minutes, then removed from the heat and covered for 5 minutes.

Heat the grill to a medium to high temperature.

Vegetables from zucchini, carrots and green onions are mixed with olive oil, pepper and a pinch of salt. The vegetables are grilled, turning the vegetables once until they are fully cooked.
