Yellow koshari is a popular traditional Egyptian dish that consists of rice, pasta, lentils, roasted onions, spices and sauces. It differs slightly from regular koshari with brown lentils. Learn how to make delicious yellow koshari:

How to make yellow koshari: Ingredients
A cup and a half of rice
1 1/2 cups short pasta (short pasta or spiral pasta)
A cup of red lentils
2 medium sized onions, thinly sliced
3 tablespoons of olive oil
1 teaspoon of ground cumin
1 teaspoon of ground turmeric
1/2 teaspoon of ground hot pepper
Salt to taste

How to make yellow koshari:
1- In a bowl, wash the rice, pasta and lentils well and drain them from the water.
2- In a large bowl, immerse the lentils in 3 cups of hot water for 30 minutes.
3- In another bowl, place the rice and pasta and add water so that it covers them by 2 to 3 cm above the surface. Leave them until they mature.
4- In a large frying pan, add the olive oil and heat it over medium heat. Add the onions and stir-fry until golden.
5- Add the cumin, turmeric, hot pepper and salt and stir well.
6- Add the cooked lentils and the cooking water and bring to a boil.
7- Gently stir the rice and pasta and add them to the pan. Gently stir the ingredients until combined.
8- Leave the koshari on a medium heat for 5 minutes, until it becomes tender.
9- Serve the yellow koshari hot and garnish it with roasted onions.
