As an authentic Egyptian family, Sahar Ahmed, who immigrated with her family from Egypt since 1969, and Dina Fahim, like any mother and daughter, loved making delicious dishes that they eat together or with friends, especially as they live in Boston, the United States of America, this city that is famous for its seafood restaurants as well as many restaurants However, they took a different path to make popular Egyptian vegetarian food, especially koshari. They even called their restaurant “Koshari Mama”, especially since this dish reminds her of her late mother, who used to prepare a feast of koshari on weekends, and even used to wake up to the delicious smell of browning onions. After her departure, she made this habit inexhaustible, and even made those who knew her get used to this habit, and even asked for it by name until she implemented her own project.

Mother Sahar said in her interview with “The Seventh Day” that eating is the easiest way to express love and care, for about 6 years she has been thinking of doing her own project, especially with every invitation she brings to friends and acquaintances in Boston, which is for American friends who are greatly fascinated by Egyptian food. And she continued: Preparing food and sharing it is the way we celebrate and the simplest way to preserve our culture from generation to generation, as it transmits through it favorite family recipes that nourish our souls and not just our stomachs, as she explained that there is always a story related to food, and these stories we always love to talk about when We offer a favorite dish made by our own hands.

And she added that regardless of your cultural background, food is something you share and enjoy with others, so she wanted to make the experience unique and make the most famous vegetarian dishes in Egypt, including taameya, koshari and eggplant of all kinds.
